Roasted Apples with Thai Aromatic Spices

Roast apples with spices is one of the perfect dessert or snack that's rich in flavor, yet simple to make. Since we still have a few days left of summer, I’m not full on ready for all things pumpkin, so I’m slowly transitioning into the new season with local apples instead. You can enjoy this as is, top off with your favorite vanilla ice cream, or throw some leftovers on a cozy bowl of oats. The world is your oyster ;)

Ingredients:

  • 2 apples, peeled and sliced

  • 3/4 inch piece of ginger, peeled and grated

  • grated zest and juice of 3/4 orange

  • 1/2 tbs butter (or coconut butter), cut into small pieces

  • 3 cardamon pods, crushed

  • 3-4 start anise

  • 3 cinnamon sticks

  • 3 bay leaves

  • 1/4 tsp freshly grated nutmeg

  • 1/4 tsp allspice

  • pinch of freshly ground black pepper

  • 1/4 tbs grated coconut sugar

  • 1 tbs honey

Directions:

  • Preheat oven to 350 F

  • In a large bowl, mix together all of the ingredients except for the apples and butter (or coconut butter). Add the Apples and mix thoroughly so that the apple pieces are well coated.

  • Pour the apples into a roasting pan in an even layer and top with the pieces of butter. this will create a spiced butterscotch as it melts with the honey

  • Bake until the fruit has caramelized, about 12 minutes, occasionally basting the fruit with the caramel during cooking.
