10 Minute Healthy Tuna Salad Sandwich
Today I’m sharing my go-to quick, simple, and satisfying lunch that takes less than 10 min to whip up!
I don’t know about you, but tuna salad sandwiches were one of my absolute favorites as a kid. I used to loveee them on a hot dog bun stuffed with sour cream and onion chips. And of course at the time, I preferred buying pre-made tuna so I didn’t have to deal with making it.
My love for tuna hasn’t faded, but I’ve learned to enjoy making it myself so I know I’m eating high quality and sustainably caught tuna. I’ve also upgraded the crunch factor with some colorful radishes and traded the hot dog bun for a slice of sourdough. Though maybe one day I’ll have to bring back my favorite old school style of tuna sandwich to experience some childhood nostalgia.
Recipe: (Serves 2-3)
1 can of unsalted albacore tuna in water. (Wild Planet is my favorite brand because it is sustainably caught)
1/4 cup of celery, diced
2 tbs of organic mayo (Sir Kensington's is my favorite brand)
Celery salt and pepper to taste
1 tsp poppy seeds (optional add-in)
Directions:
Add the can of tuna (include the water) in a small bowl. Mash the tuna with a fork until shredded. Add 1/4 cup of celery, mayo salt, pepper, and poppy seeds, and mix until combined.
Add the tuna to a toasted slice of sourdough bread, served on a bed of micro-greens tossed in olive oil, garlic powder, splash of lemon juice, salt, pepper, and sliced radishes.
