Pitaya and Coconut Smoothie Bowl

This summer I’m all about smoothie bowls! Smoothies are my go-to to get something quick in my stomach, rehydrate, and pack in nutrients and electrolytes, especially with the warmer weather and heat waves.

One of my favorite places to travel to is Vietnam, where pitaya, also known as dragonfruit is so fresh and delicious. In the US, it can be difficult to find dragonfruit, not to mention expensive for something that doesn’t taste quite as fresh because it’s not local. I did however stumble upon frozen pityaya at my local whole foods, and though not quite the same as fresh, it works great for smoothies!

Ingredients:
1 cup of Siggies coconut yogurt or Coyo (dairy free) coconut yogurt
3/4 cup frozen cauliflower
1/2 cup frozen pitaya
Splash of coconut water (enough to blend)
1 tbs flax oil (healthy fat)
1/3 tsp maca powder (adaptogen to support energy + hormone health)
1 scoop collagen (optional for protein + supports hair, nails, skin, gut health+)

Directions:
Combine all ingredients in high speed blender. Top with coconut flakes, blueberries, and chia seeds, or your favorite toppings of choice!
