Chocolate and mint are a perfect pair if you ask me. Growing up I loveeedddd anything with a mint chocolate combo — think Andes chocolates, and grasshopper and mint chip ice cream, hershey’s mint chip bars, Girl Scout thing mints. You get it.

These dark chocolate peppermint bites are so easy to make and are great for a last minute gift for that chocolate lover or easy dessert to bring to those holiday parties!

I’ve been loving making homemade dark chocolate because it is SO easy. I also love knowing it’s made with high quality ingredients and is refined sugar free, contains no soy lecithin or food additives, and is made with raw cacao. Raw cacao is packed with nutrients like antioxidants, iron, zinc, and a mood booster. Plus, of course homemade means made with lots of love.

Ingredients (makes 8-10)

  • 1 cup melted cacao butter

  • 1/2 cup cacao

  • 3-4 tbs maple syrup

  • 1 tsp organic peppermint extract

  • 1-2 crushed candy cane

  • Pinch of sea salt (optional)

  • 1 tsp vanilla extract (optional)

Directions: arrange 8-10 medium to large cupcake liners on small baking sheet. In double boiler, melt cacao butter. Once melted, whisk in cacao powder, maple syrup, peppermint extract, and optional pinch of sea salt and vanilla extract. Pour all but approximately1/4 cup melted chocolate into cupcake liners. Place in freezer for about 20 minutes. Take out frozen chocolate, top with remaining melted chocolate, add crushed candy cane, and freeze for another 10 minutes. These can be stored in the fridge, freezer, or room temperature.
