Paleo Apple Pie Bread

Paleo Apple Pie Bread.jpeg

The crisp FALL weather is back aka it’s the perfect time to make the house smell like warm apple pie with this apple pie bread! Soft, moist, and super fluffy with a lil bit of crunch. It’s also paleo, gluten-free, refined sugar-free, and guaranteed to satisfy that sweet tooth. This bread makes for the perfect breakfast topped with nut butter, ghee or melted coconut butter, a delicious snack, or even dessert!

This recipe was adapted from @livinghealthywithchocolate. I modified by using apple spice in lieu of the cinnamon, only added walnuts on top, and omitted the caramel sauce as I found the bread to be plenty sweet without it.

Paleo Apple Pie Bread (Serves 8-10)

Ingredients

Apple Pie Bread:

  • 2 cups almond flour

  • 1 tbs coconut flour

  • 1 tsp apple pie spice

  • 1 tsp baking soda

  • 1/4 tsp sea salt

  • 1 small apple finely sliced

  • 1/3 cup full-fat coconut milk (I’ve found this to be the best brand unless you DIY)

  • 4 tbs coconut oil, melted

  • 6 tbs raw honey

  • 2 eggs, room temp

  • 1 tsp apple cider vinegar

  • 1/2 tsp vanilla extract

Crumb Topping:

  • 2 tbs almond flour

  • 1 1/4 tsp coconut oil, melted

  • 1/4 tsp apple pie spice

Directions:

  1. Preheat oven to 350 F.

  2. Grease a 6.4 x 3.8- inch loaf pan with coconut oil or ghee, and line it with a piece of parchment paper.

  3. Mix together dry ingredients: almond flour, coconut flour, apple pie spice, baking soda, and salt

  4. In a separate bowl mix together wet ingredients: coconut milk, coconut oil, honey, eggs, ACV, and vanilla extract.

  5. Mix wet and try ingredients together until combined (without over mixing)

  6. Add apple spices to batter, gently folding in

  7. Pour batter into loaf pan

  8. Mix crumb topping ingredients together then sprinkle on top of the bread

  9. Bake for 30 minutes, then cover bread with aluminum foil and bake until toothpick comes out clean in the center, about 50 minute total.

  10. Remove bread from pan while warm.

  11. Store in fridge to keep fresh.
