Mint Chip Smoothie

Diving into this dreamy blue mint chip smoothie and swimming my way through the week!

This is by far one of my favorite smoothie combos 1) because I love mint chip anything and everything and 2) to help stay hydrated and replenished during these dry winter days and 3) that pop of blue is an instant mood booster, right?!

It’s made with spirulina which is a superfood that has powerful antioxidant and anti-inflammatory properties, supports your immune system, and can increase energy — which may be helpful during those first days of your menstrual cycle if you feel fatigued or those lower energy winter days, which I’ve been feeling A LOT lately.


INGREDIENTS:

  • 6-8oz almond milk or enough to blend (Malk Organics is my favorite because of the simple ingredients)

  • 1/2-1 frozen banana

  • 1/3-3/4 cup frozen steamed + frozen cauliflower

  • 6-10 mint leaves

  • 1 tsp flax oil

  • 3/4 tsp blue spirulina (I love blue spirulina because it is flavorless, compared to green which tastes grassy)

  • 2 scoops collagen (protein)

  • 1/2 tsp peppermint extract

INSTRUCTIONS:

Combine all ingredients and blend until smooth. Top with your favorite add-on’s like shredded coconut, cacao nibs, and mint.

I personally love smoothies for breakfast because they are packed with nutrients and are a sure way to start the day off right, which can affect your choices throughout the rest of the day. I also love them as a mid-day snack around 2-3pm.
