Paleo Almond Joy Bites

Give yourself some lovin’ this Valentines Day and every day with these paleo almond joy bites. These balls are a healthier spin on the traditional Almond Joy candy bar, but without the refined sugar and processed ingredients. Instead, these treats are paleo, vegan, and refined sugar free. They are also SUPER easy to make, require no baking (unless melting the chocolate counts), and taste so delicious. And rest assured, if I can make them, so can you.

This recipe is adapted by Beaming Bakers Vegan Coconut Truffles combined with the almond joy bar recipe I shared back around Halloween.

PALEO ALMOND JOY BITES

Prep time: 5 min
Cook time: 20-30 min (in freezer)
Yields: about 9-12 ball total

Filling Ingredients:

Directions:

  1. Line a baking sheet with parchment paper. In a bowl, combine filler ingredients together (can blend or just mix). Use about 1.25 tbs of the filler, place 1 almond in the center, and roll into bite sized balls (makes about 9 or so). Place the balls on the lined baking sheet and freeze for 10 minutes.

  2. Meanwhile, lightly melt the chocolate in either a double boiler or microwave. Once chocolate is lightly melted, use 2 forks to place balls in chocolate and coat one at a time. Once all are the balls are coated, place arrange on the lined baking sheet and freeze for 10 min.

  3. Repeat the process of coating the balls in chocolate one more time, this time sprinkling on rose petals (optional) or shredded coconut and a pinch of sea salt on the top. Freeze for another 10 minutes, then voila. These can be stored at room temp, fridge, or freezer (thaw out before serving).
