Mint Chip Superfood Smoothie Bowl
Smoothies and smoothie bowls are my go-to breakfasts year round. I love how quick and easy they are to put together, and the fact that they are packed with nutrients to support your energy and overall health. If you’ve come to one of my morning yoga classes, I almost always have a green smoothie tagging along with me. Even though the smoothie/bowls are constant, I love switching up the ingredients. This mint chocolate chip superfood smoothie bowl is my spin on nice cream and has been my all time favorite lately.
Combine ingredients below and blend in a Vitamix or high speed blender:
1 cup frozen cauli
1 handful spinach
10-16 fresh mint leaves
1/2-1 frozen banana
1 tsp spirulina
1 tsp Navitas Organic cacao nibs
8-12 oz coconut milk (or nut milk of choice)
1 scoop collagen
Top with: 1 tbs cacao nibs, coconut, chia seeds and mint
