Healthy Caesar Salad Recipe

Looking for a quick and simple 20 minutes meal idea that will leave you satisfied? Look no further.

I’ve gotta be honest, when it comes to salads, they’re not the first thing I’d choose especially during the colder seasons. I also spent years back in my calorie counting food obsessed phase where all I ever ordered out at restaurants was salads — boy was I missing out!

Needless to say, when it comes to salads, a classic homemade Caesar will always win my heart. The dressing is packed with elathy and potent ingredients like garlic, lemon juice, anchovy, and raw apple cider vinegar to support your health and immune system. Delicious, immune boosting, and tasty AF, that’s a win for me!

You can eat this as a side or top it with your favorite protein of choice and enjoy as a quick and simple meal. Grass-fed steak and grilled shrimp are my favorite add-on’s to make it a well balanced meal.

Caesar Dressing Ingredients:

  • 3-4 cloves of garlic, chopped (functional food to support your immune system)

  • 1/2 fresh lemon, juiced

  • 1 tablespoon anchovy paste (rich in omega 3’s, protein)

  • 1/8 tsp Worcestershire sauce (optional, omit if soy free)

  • 1 egg yolk

  • 2 tablespoons raw apple cider vinegar (this one is a favorite)

  • 1 teaspoon mustard powder or 1 tsp dijon mustard

  • Salt and pepper to taste

  • 2-3 tablespoons olive oil (this one is a favorite)

Instructions: Combine all of the ingredients except for the olive oil and blend on a low setting until combined. Then slowly pour in the olive oil blending from a low setting and gradually increasing it to high until combined (About 30 seconds to a minute). You can also omit the blending and simply whisk together!

Croutons Ingredients:

  • 1-2 medium slices of sourdough, cut into cubes

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1 teaspoons olive oil

Instructions: Preheat oven to 375. In a medium sized bowl, combine the garlic powder, onion powder, and olive oil, then add in sourdough and mix until the bread is covered. Spread them on a baking sheet and bake for about 15 minutes until crispy or toast in the toaster oven.

Caesar Salad Ingredients:

  • 1-2 hearts of romaine, chopped

  • 1 tbs parmesan cheese, shredded (optional)

Instructions: Add the chopped romain to a large bowl, mix in the dressing, toss in the croutons, season generously with fresh ground pepper, and top it off with some fresh grated parmesan cheese — or nutritional yeast if you prefer dairy free.
